Banana Bread Latte
Banana Bread Syrup:
-1 banana
-1/2 cup coconut sugar
-2 tbsp maple syrup (optional)
-1 tsp cinnamon
-1/2 tsp vanilla bean paste
-1/2 cup water
-120 ml milk of choice
-ice
-double espresso shot
Directions:
In a small pan, combine the banana, coconut sugar, cinnamon, and water. Simmer over medium-low heat for 5–10 minutes, mashing the banana as it softens. Remove from the heat, then stir in the vanilla and an additional pinch of cinnamon. Strain the mixture through a fine mesh strainer, separating the syrup from the pulp, and set the syrup aside.
Prepare your espresso shot. Add about 1 oz of the banana syrup to a shot glass or directly into the cup you’re using, then pull the espresso shot over the syrup.
Stir the espresso and syrup together, then pour into your serving cup. Add ice and your milk of choice, then enjoy!
